Bacardi Silver RAZ-berry Sorbet
BACARDI SILVER RAZ-berry Sorbet
1 cup sugar 1⁄2 cup water 1 quart fresh raspberries, about 1 lb. (Frozen whole berries can be substituted) Juice of 1⁄2 lime 1 bottle Bacardi Silver Raz (Substitute Bacardi Silver Mojito for a unique taste)
Combine sugar and water in a small saucepan and place over medium-low heat until the sugar dissolves and the syrup is clear. Remove from heat and cool.
Place raspberries, the cooled syrup and lime juice in a blender or food processor and process until completely smooth. For a smoother sorbet (recommended), pour the puree through a sieve to remove the seeds.
Combine puree with Bacardi Silver Raz and place in refrigerator to cool.
Add mixture to an ice cream machine and freeze according to the manufacturer’s instructions. Serve soft immediately or place in a container and transfer to your freezer for a firmer sorbet.
While an ice cream machine is recommended, if you do not have one you can transfer the mixture to a bowl and place in the freezer. Remove the bowl occasionally (every 15 to 30 min) to scrape down the sides and stir until the mixture reaches the appropriate consistency.
